Walk down the freezer section of the local grocery store and see literally hundreds of brands, flavors, and crust styles. The decisions are endless. But, one thing is for sure, none will be as healthy or delicious as this gluten-free pizza recipe.

With so many reasons for folks to cut out or reduce carbs – diabetes, wheat allergies, celiac, and more, this fathead pizza dough recipe gives you the satisfaction of eating a nice crusty pizza, with none of the guilt. This pizza is not only delicious it is fun to eat and has all the flavor of a regular pizza crust. Give this gluten-free pizza a try.
You need only 4 simple ingredients and about 40 minutes of your time from start to finish.
Ingredients
Shredded mozzarella cheese – 1 cup
Almond flour – 1 cup
1 tablespoon of cream cheese – at room temperature (substitute with Boursan or herbed cheese for extra flavor)
Egg – 1 at room temperature
1 tsp of baking powder (optional – gives the pizza a fluffier texture)
This recipe feeds 2 people. Double up the recipe for 4 or triple up for 6 people.
Directions:
The CRust
- In a large bowl mix (with a wooden spoon) the mozzarella cheese and the almond flour until combined
- Add the cream cheese on top
- Place in the microwave for 45 seconds on high
- Mix the ingredients well using a wooden spoon
- Place in microwave for an additional 45 seconds on high
- Mix the ingredients well using a wooden spoon
- Add the egg and stir in with a wooden spoon
- You may need to finish kneading the dough by hand
- Be careful as it can be quite hot
- Line a baking sheet with parchment paper
- With wet hands spread the dough as thick or thin as you like it across the pan
- Keep a bowl of water to moisten hands while spreading the dough as it can be sticky
- Pierce the dough with a fork to avoid bubbling up
- Bake at 350 degrees Fahrenheit for 10 to 11 minutes until slightly golden

- Use any of your favorite toppings – name your pleasure
- Pizza sauce
- More cheese
- Veggies
- Pepperoni
- Bake for another 10 minutes
- Slice and serve
